GF & DF Brownies w/ Chocolate Ganache

Ingredients (8 servings):

  • 2/3 cup almond flour
  • 1/4 cup GF flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • ½ tsp cinnamon 
  • 1 cup coconut cream 
  • 1 cup chocolate chips
  • 1 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract

Chocolate Ganache

  • 1 cup chocolate chips 
  • 1/2 cup full-fat coconut milk 
  • ¼ cup maple syrup


Method:

  1. Preheat oven to 350°F. Line an 8x8 baking pan with parchment paper.
  2. Melt chocolate chips using a double boiler. Add coconut cream and cinnamon, then set aside to cool. Add maple syrup once cooled.
  3. In a bowl, whisk almond flour, GF flour, cocoa powder, baking powder, and salt.
  4. Mix in eggs one at a time, then add vanilla extract.
  5. Gradually fold the dry ingredients into the wet until just combined—do not overmix!
  6. Pour batter into the pan and spread evenly. Bake for 20 minutes or until a toothpick comes out with moist crumbs.
  7. For the ganache: Place chocolate chips in a bowl. In a saucepan, heat coconut milk and maple syrup until it simmers.
  8. Pour hot coconut milk over chocolate chips and let sit for 2-3 minutes. Whisk until smooth. Let cool to thicken.
  9. Spread ganache on top and decorate with cherries or edible flowers. Enjoy!
