GF & DF Brownies w/ Chocolate Ganache
Ingredients (8 servings):
- 2/3 cup almond flour
- 1/4 cup GF flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- ½ tsp cinnamon
- 1 cup coconut cream
- 1 cup chocolate chips
- 1 cup maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
Chocolate Ganache
- 1 cup chocolate chips
- 1/2 cup full-fat coconut milk
- ¼ cup maple syrup
Method:
- Preheat oven to 350°F. Line an 8x8 baking pan with parchment paper.
- Melt chocolate chips using a double boiler. Add coconut cream and cinnamon, then set aside to cool. Add maple syrup once cooled.
- In a bowl, whisk almond flour, GF flour, cocoa powder, baking powder, and salt.
- Mix in eggs one at a time, then add vanilla extract.
- Gradually fold the dry ingredients into the wet until just combined—do not overmix!
- Pour batter into the pan and spread evenly. Bake for 20 minutes or until a toothpick comes out with moist crumbs.
- For the ganache: Place chocolate chips in a bowl. In a saucepan, heat coconut milk and maple syrup until it simmers.
- Pour hot coconut milk over chocolate chips and let sit for 2-3 minutes. Whisk until smooth. Let cool to thicken.
- Spread ganache on top and decorate with cherries or edible flowers. Enjoy!
