This miso-glazed salmon bowl is as nourishing as it is delicious - a tender, flaky fillet coated in a sticky blend of white miso, honey, ginger, and lemon zest, served over hearty brown rice with creamy avocado, crisp cucumber, fresh sprouts, and nori. Instructions

How to make this delicious meal

Prep

  1. Cook the rice according to package directions.
  2. In a small bowl, mix together the miso paste, honey, sesame oil, lemon zest and juice, and grated ginger.
  3. Cut the fillet into bite-sized cubes. Toss the salmon bites in the glaze and set aside while prepping toppings.
  4. Thinly slice the cucumber. Slice the avocado. Tear or crumble the toasted nori into small pieces.

Cook

  1. If you're using an air fryer then add salmon bites to the air fryer basket (lined with parchment if needed). Cook at 390F for 6–8 minutes, shaking halfway, until caramelized and cooked through. If you're using the oven then place salmon bites on a lined baking tray. Bake at 400F for 10–12 minutes until sticky and just cooked.
  2. Scoop the rice into a bowl. Top with salmon bites, avocado, cucumber, sprouts, crushed nori, and a sprinkle of sesame seeds. Enjoy!

  • 1 salmon fillet
  • ¾ cup cooked brown rice
  • ½ avocado
  • ½ persian cucumber
  • 1 small handful of sprouts
  • 1 small sheet nori
  • ½ tsp sesame seeds

Miso Glaze

  • ½ tbsp white miso paste
  • 2 tsp honey
  • ½ tsp toasted sesame oil
  • Zest & juice of 1/2 lemon
  • ½ tsp fresh ginger
